Asparagus – These “trees” give us vitamin A for immunity and healthy eyesight, and vitamin K for strong blood and bones. Roasting with a little olive oil, salt, and pepper brings out their flavor.
Spinach – In a salad or cooked as a side dish, like asparagus, spinach is a great source of vitamins A and K.
These fruits and vegetables contain fiber, too, for a healthy digestive tract. Their antioxidants lower risk for diseases like heart disease and diabetes.
